Cornbread stuffing is the secret ingredient in this cheesy baked Mexican ground beef casserole, also featuring diced tomatoes with jalapeño, chili powder, cumin, hot sauce, canned sweet corn, and Cheddar cheese. "Nice and easy dinner," says fabeveryday. "I added seasoning salt and garlic powder to the meat, since I wanted a little something extra. Delicious topped with a bit of sour cream."

A simple, versatile Mexican-inspired casserole with layers of tortilla chips, ground beef, chili beans, salsa, and sour cream. "This Mexican casserole is easy to make and very tasty," recipe creator ANDREALF63 says. "I often substitute ground turkey and low fat dairy products and it's still delicious! Serve with chips, salsa, and green salad."

Tater Tot casserole, a Midwest American mainstay, gets a Mexican-style makeover here with melted Mexican cheeses, ground beef, beans, and taco seasoning. "Just what the grandkids ordered," recipe creator Mama Smith says. "Tater Tots, Mexican food, and cheese! This is one of those meals that you can throw together with ingredients you would normally have on hand. Great for pot luck or a quick meal for unexpected company. Some kids don't like onion or garlic; these can be omitted."

The secret here is using refrigerated crescent rolls as the crust. You'll add layers of seasoned ground beef, sour cream, and shredded cheese, topped with crushed tortilla chips. "Made exactly as written except took another reviewers suggestion and switched out flour tortillas and used corn," reviewer slapper78 says. "My family says this is a recipe to keep and that I need to remember to make again."

This baked taco-style lasagna features delicious layers of corn tortillas, salsa, seasoned ground beef, and sour cream, topped with Cheddar and Monterey Jack cheeses. "This was an excellent dish," raves GuarinoMom. "Super easy to make and we all loved it. Even my husband who doesn't like leftovers had some the next day. Yum Yum. This spicy casserole is a healthier, baked take on chiles rellenos, with roasted poblano peppers and cheese. "Super-easy, delicious, and low-carb version of chiles rellenos," recipe creator EmmLee says. "Serve with dollops of low-fat sour cream and pico de gallo or salsa."

"If you want to skip the charring step, simply tear the tortillas into fourths so they absorb the sauce better."

Layer Cheddar cheese and canned chiles along with a mixture of evaporated milk, eggs, and flour over split whole green chiles, and top with Monterey Jack cheese and green enchilada sauce. "It is a quick and delicious dinner," recipe creator Monya Heath Williams says.

Here's an easy, budget-friendly casserole that combines ground beef, chorizo, and black beans with hash brown potatoes and Cheddar cheese. "For a more authentic dish, substitute queso panela for the cream cheese and queso blanco for the cheddar," the recipe advises.

Handmade chicken tamales lay on a bed of Spanish rice topped with a creamy tomatillo sauce and a blend of Mexican cheeses. "Excellent casserole!" reviewer Medora says. "I had some leftover tamales and came to Allrecipes to look for something to do with them. I had pork tamales and so used red sauce rather than green. Otherwise, I made the recipe exactly as posted."
